Disney Planes Birthday Party - Cloud capped mountain cupcakes

Disney Planes and Planes Fire and Rescue was the theme for my son's 5th Birthday Celebration. My Son is Gluten intolerant and this post shows you how to create yummy gluten free, dressed up cupcakes presented as "cloud capped mountains" The cake servers were labelled - this server: Piston Peaks and these were Gluten Free carrot cakes topped with Cream Cheese/Philly Cheese icing.

The second cake server had Propwash Muddy Mountains and these were Gluten Free Chocolate cakes.

Chocolate Gluten Free, Flour Free Cake Recipe, one of our FAVOURITES
Ingredients
1/3 cup Organic Cacao
1/3 cup Hot water
200g Organic Dark Chocolate - the better the quality the better the outcome
120g Organic Butter soft
1 1/3 cup Rapadura or brown sugar
3/4 cup Organic Almond meal
1/4 cup Hazelnut meal
4 Organic eggs separated

Method
Blend Cacao in hot water until smooth in one bowl
Melt chocolate and butter together in a double boiler
To cacao and water, add melted chocolate, butter, sugar, nut meal and egg yolks; Mix well
In a separate bowl beat egg whites until soft peaks form and gradually fold this into the chocolate mixture.
Pour mixture into lined and greased cake tin - we use a square because this is rich or in this case, patty cake papers/ cup cake liners.
Bake at 140oC or until skewer comes out clean.  These do not rise much at all, so fill them to 1/4 inch from the cup cake liner top. Cooking time is approx. 25-30minutes.

The cakes were topped with circles of sky blue fondant and butter icing was pipped on top for the clouds.  Ben took off the sky of blue, cloud and Fondant planes I created and just ate the cakes.  As far as he was concerned it was all part of the decorations and not for eating ;-)...

The patty/cup cake papers and cup cake toppers were purchased in a kit from Birthday in a box.  I used this company for so many of my decorating.
